The Eatery-Bar "La Fojateria" is located on the road entering Sellano coming from Foligno/Rasiglia at the Soglio pass (828 m.s.l). The recently renovated rural restaurant offers tripe dishes and recipes from the Umbrian-Sellano culinary tradition. Authenticity and a short supply chain are the basis of local cuisine. Worth trying are the succulent first courses, strictly homemade, the mixed platters of cured meats and cheeses, the Ciauscolo cured salami is highly recommended (it is a fine-grained cured meat, obtained from the double grinding of fine cuts of pork such as bacon, shoulder and trimmings of ham and loin) and the second courses with the proposals of the day. Obviously also not to be missed and tasted are the Fojata (a specialty from which the restaurant takes its name) and the typical Sellanese dessert "Attorta".
As well as offering a bar service, the restaurant also has a fresh food counter offering typical local cured meats and cheeses, including the famous Ciauscolo PGI. In summer, it has a shaded outdoor area with tables.

This is Fojateria today, a place where tradition and innovation come together without compromise. Trattoria, bar counter for aperitifs, breakfasts and delicious "finger food" snacks with strictly homemade products, an "old" charming hand-cranked slicer and a counter with local first fruits of the Umbrian tradition for consumption and purchase. Truffles and wild boar are not lacking together with the famous "Ciauscolo" salami. In summer, the restaurant has a shaded outdoor area with tables. Strong dish? ...everyone!
